Zafrani Chicken Tikka Recipe In English

Ingredients:
  • 1 kg…. Chicken boneless
  • 2 tbsp…. Oil
  • 2-3 tbsp…. Coriander (chopped)
  • 2 tbsp…. Green chilies (chopped)
  • 1/2 tsp…. Saffron
  • Salt… to taste
  • 2 tsp…. White pepper
  • 1 tsp ….Turmeric powder
  • 1/2 tsp…. Cumin powder
  • 1 tsp…. Fennel seeds powder
  • 1 cup ….Cream
  • 2 tbsp …..Lemon juice
  • Ghee for brushing
 
Ingredients for saunf raita:
  • 1 cup…. Yogurt
  • 1 tsp…. Fennel seeds powder
  • Salt…. to taste
  • 1 tsp ….Chili powder
  • 2 tbsp…. Lemon juice
  • 1 tsp…. Cumin seeds
  • 1 tsp…. Coriander powder
  • 2-3 ….Green chilies
  • 1/4 cup…. Mint leaves
  • 1/2 cup…. Coriander (fresh)
 
Method:
  • Cut the chicken into large cubes add oil, coriander, green chilies, saffron, salt, white pepper, turmeric, cumin, fennel powder, cream and lemon juice.
  • Marinate it and keep it aside for 30 to 40 minutes.
  • Thread chicken cubes on skewers and grill on charcoal.
  • Brush oil or ghee when they are 80% done.
  • Grill for further 2 to 3 minutes until chicken is fully cooked.
  • Directions for raita:
  • In a blender add fennel powder, salt, chili powder, lemon juice, cumin seeds, coriander powder, green chilies, mint leaves and fresh coriander.
  • Blend the mixture well until you get a smooth paste.
  • Add 3 to 4 tablespoon in 1 cup yogurt. Mix well and yogurt is ready.
